Instructions
Sift dry ingredients into a large bowl. Add dried currants and mix with a wooden spoon. Add the buttermilk and mix with a wooden spoon until it forms a sticky dough. If the dough is overly sticky, add a little more flour. Knead dough a few times in the mixing bowl or on a floured surface until it forms a round loaf. It will start out sticky and crumbly but after you knead it a few times, the dough will come together. Shape dough into a round and place in a Dutch oven with a lid. Cut two criss-cross slices into the top of the bread with a knife (see photo above). Brush the leftover buttermilk over the top of the bread. Bake covered for 30 minutes at 425F/215C and then about 15 minutes uncovered. The bread is done when golden brown and the internal temp is 180F/82C. Let bread cool on a wire rack. Place a couple pats of butter over the bread and let them melt as the bread cools.
Notes
If you weigh ingredients >> Start with 480g of flour and add more as needed. If you use buttermilk, you should be fine with 480g of flour and 415ml of buttermilk. A few more sprinkles of flour might be needed as you knead it. If you use milk + vinegar instead of buttermilk, start with half of the milk and add more as needed.
If you use a buttermilk alternative >> I've found that real buttermilk works the best in this recipe and with the amount of flour indicated. If you use a buttermilk alternative (e.g. milk + vinegar), you'll likely need less of it. Start with half of what's listed in the recipe and add more a little at a time. If you add too much milk and the dough is too sticky, add a little more flour.
Buttermilk alternative >> mix 1 tablespoon of lemon juice or distilled white vinegar with 1 3/4 cup fresh 2% milk and let it sit for about 15 minutes. Or thin yogurt or sour cream with some milk until you have 1 3/4 cup.
In place of dried currants >> you can use raisins, dried cranberries, etc. Or make it plain.

The real internet exists. Fedfree's mission is to teach you how to use it. Every part of it. To most people, it is hidden. Your ISP might put you behind a CGNAT for example, or outright ban you from opening ports; one of Fedfree's goals is to teach you how to set up various kinds of tunnel connections e.g. SSH port forwarding, PPP over L2TP, Wireguard/OpenVPN, etc.
The mentality behind Fedfree is that all the organisations out there, like SFC, GNU, EFF, FSF... April... all these organisations are good, but they can only do so much. We as libre software activists must organise, but how? First, we need infrastructure, our own infrastructure that we control, and we need a charter that defines our movement. By definition, the libre movement is loose and free, where people can do whatever they like, but most people today use centralised hosting services like Github, which means we have huge single points of failure.

Was really looking forward to putting my hand on the Atlassian AI tools that have been enabled in our production instance. But then had to learn that the feature I was intending to use (build your own agents) is blocked for everyone because its pending works council approval. I get that this is important. Would just have been nice if IT wouldn’t have announce the stuff being available already know that it’s practically not.
Fiddled with the normal Atlassian Cloud automation for confluence and of course got frustrated that even the most simple things don’t seem to be possible. Create a new page from a template, ask the user to fill out a few fields and then replace variables in the template with the user input. How hard can this be. Atlassian’s answer: YESSSS!!!!
Cleaning up iCloud
I ran out of iCloud storage because I sync my Photos via iCloud. Now how to download and delete photos there? Turns out there is a tool called iCloud-downloader that can do just that. And also in a smart way by either just downloading, syncing or moving the files off iCloud. Unfortunately I had to temporarily disable certain security features (advanced data protection (e2e encryption) and 2FA with Passkeys) in my Apple Account for the script to work. But those can be turned on later again. The download maxed out my DLS Line and was done after a few hours. It placed the files in a folder structure like I would normally do: YYYY/MM/DD.
Now having the files locally, I started to import them into my Immich instance. For that I used an Immich CLI container to consume the file I had just downloaded and feed them into my instance. This tool would delete the files that it had already uploaded into Immich. Before the upload starts, the tool build checksums of all files to detect files that have already been uploaded to Immich. Those would be skipped for uploading. Rather neat. That tool can even watch a directory and continuously consume images into Immich.
In combination with the iCloud downloader that also has a watch mode, one could potentially build a continuous upload from iCloud into Immich. Of course only if you don’t have the Immich App installed on your iPhone that’s backup up all photos to Immich anyway.
Sushi & Poker
After a bit back and forth on the schedule of our weekly poker night we settled on wednesday this week. For dinner we decided for self-made Sushi again. Just simple one with cucumber, avocado and raw salmon. It’s actually a quick meal to prepare of the rice is already read. That takes the longest as it needs to cook for about an hour and then cool down again for at least as long. That dinner got the blessing of our oldest kid as delicious 😉
The clear highlight though was a powerpoint presentation of our youngest to sell a China vacation to her brothers. She was working on that the whole week and did her research where to go, what’s the local thinks to visit (and why), the accommodations, cost, flights. etc.
n8n vibe coding
Finally found some use case for my n8n instance. I’m capturing some web links in my Wallabag instance. If I want to make sure those links are still available in a few years, I should probably submit them to the Internet Archive so I can use their Wayback Machine to find it if has been removed or changed by then on it’s original place.
It’s now working for me. Still need to polish the N8n workflow, but for my use case the Wallabag node seems to do what it needs to do.
While I was at it … I also had Claude create a node for Immich.

My default coffee make is the trusty AeroPress. I just got a new one for Berlin as I took the old one to #project25. The new AeroPress now has clear plastic and one can see the coffee grounds soaking pretty clearly now. On to many years of good coffee.

I’m considering getting glasses for work eventually. It’s getting slightly more difficult to read small text at arms length. Given my age and spending almost 35 years in front of computer screens for several hours a day I think it’s OK to admit that eyesight is slowly but surely deteriorating. So I got my eyes measured and was testing some frames. I think the final candidates are: Will do another round of testing next week and then probably order. Will just use them for screen work and stuff. Far sight is still perfectly fine.

On Saturday evening I joined a few friends to a small dancing / disco outing at a nearby small village. Really lovely old village restaurant with a small room with a bar where the food and drinks were served. A larger ball room in the back was set up with a DJ for dancing. Well, none of the other shutdowns have gone on this long. I'm also struggling to remember any shutdown that's gone on for any length in an economy this clearly bad and heading further downhill. Nor has there ever been a shutdown where the head of the government has said they won't be paid in the end for time worked. It makes perfect sense for the ATC's to prioritize themselves, their families and their finances over a system that consistently and chronically under-values them, over-works and over-stresses them, and has explicitly declared it has no loyalty or concern for the people who work there.

And the freedom feeling depends mostly if you live in a region that is offering you ways not to be car dependent. Where I live, we have a very decent network of bike paths in the city but also going into the countryside and traversing the province. I live on the island of an archipelago and can pull my inflatable kayak with my bike trailer, explore the islands around, access nature nearby. I can also go camping and hiking and into the wilderness 200 km away by using this cycling network. I often go visit my parents and family 140-170 km away by cycling there. I could have start to drive and bought a car 25 years ago but I moved somewhere I wouldn't need one, and my bike represents freedom. I'm free from having to pay big oil to fill a tank to go anywhere. I'm free from monthly parking fees. I'm free from paying the plates and the insurance.

Over the years, what I learned about cars don't make me see them as freedom. I see them as a way to keep people perpetually paying for gas, sending billions to big oil. I see them as an endless sea and stream of pollution. They pollute the air and the sound. They are bad for mental and physical health. They take an ungodly amount of space. They kill about a million people every year. On the planet, every 30 seconds someone is killed in a car related "accident". Every year, two billion animals (yes, billions) are killed by cars.
Going to see my nephew for his birthday in the suburbs where my sister lives is comical. Twelve people invited to go park their cars around a house that only has space for the cars of the occupants. You have to find parking everywhere you go for this thing, then whine that there's no parking anywhere. Going to a funereal is also depressing, but even more so because you can see the traffic and congestion created by someone that died.
Cars are a horrible for humanity. They're like a drug that everyone tells you to try. You'll see. They're so useful. Of course you can't go back.
