I used Mark Bittman’s basic muffin recipe because it’s perfect for me. Not too sweet or oily, although I do increase the sugar to 1/2 cup. Then I just sprinkled some cinnamon sugar on them after I filled the muffin tin. I also used oat milk and egg replacer. I did forget to put some vanilla in, because it’s not in his recipe and I haven’t made them for a while. Thanks for the inspiration. ❤️

The recipe I used has a cup of yogurt. I tried one muffin tonight and although it was moist and not too sweet it wasn't my favorite.
Maybe it would have been better warm with butter.
Next time I will probably bake cinnamon scones instead.

Check out this sweet photo I took on my latest road trip. You're looking opposite the sunset. The lower layer of clouds is maybe 1,000-3,000 feet up and is overcast. The towering cumulonimbus rises several thousand feet from the underlying layer.
The lower layer is red because it's being lit by the sun through the oblique atmosphere during sunset, but the towering cloud receives full sun because you're literally seeing the curvature of the earth in the color gradient!!
