Some things are hard today (& so will be the next few days), but my belly is full, the next two days' lunch is taken care of & my kitchen is full of the wonderful smell of spinach & cheese strata by the amazing Deb Perelmann:

Makes enough for 6 meals. I use 1200g fresh spinach & frozen stale bread. No, it's not too much spinach, believe me - you put it into a pan (not all at once!) & it cooks down just into the right amount.

Any suggestions for substitutes for the bread? I cannot eat bread it kills my joints

I have been diagnosed with the onset of cirrhosis though I do not drink, so I am keeping my carbs at a bare minimum wherever possible so I will probably not try the potatoes but I will note the idea for friends and family, thanks for sharing!

Fair enough, I will try this recipe and see how the Heavy Cream Buns work in it. It really sounds like a great bread pudding and I love Spinach.
Heavy Cream Buns
3 lg eggs (beaten)
1 1/2 tbs baking powder
2 cups heavy cream powder (sifted)
wet hands when working with dough to avoid sticking
bake at 350 f
six minutes on either side or a little longer for less doughy bread.
