Summer and my husband went next door to deliver warm muffins to our neighbor who is being treated with chemo.
She gave us the most bestest compliment. She said when the doctor asked how she managed to gain five pounds instead of losing she blamed me.
She says the constant flow of muffins, scones and pies gives her something to snack on when she feels well enough.
She also got sweet hugs from Summer who had been cleaned up and brushed before she went calling.
I have been blamed for worse things I'm sure.
Today Summer helped with the baking. I asked if I was putting in too many blueberries. She says you can't put in too many blueberries.
Summer is almost always right so I went with adding the extra berries.

You are so sweet. You make me want to bake. Not really, lol. I wish I did enjoy it though. I do enjoy it at Christmas time. Neighbors like you are few and far between. Kudos.

Wow, you are really helping your neighbor out! That is wonderful! The doctor may start prescribing your baked goods to other patients too...

I'm glad Summer got to go visiting, she must have enjoyed that. And I'm happy that you have such a strongly pro-blueberry baking assistant. The current batch of muffins look delicious.

I went through chemo 25 years ago. Anything that helps to keep up appetite is very important. (I liked vegetarian Subway sandwiches.) If I had had your muffins Iโ€™m certain I wouldโ€™ve liked them too!

I have a recipe for blueberry muffins that has you mash half of them before adding them to the batter. I love them because every bite is blueberry.

This recipe calls for mashing some too. I cut most of the berries in half so you really taste the berries.
