Trussing a Chicken


I've been doing kind of a study of cooking chicken. Last night I watched at least 45 minutes worth of YouTube just of people trussing a chicken. There are many different techniques. I think I've settled on trying out the Chef Steps technique presented by Grant Crilly for dinner tonight! I'll be oven roasting 2 whole chickens together. I don't know which I'm more excited about, trying out the new trussing technique, the extra bird carving practice, or actually eating the chicken. #cooking #chicken #learning #eating #food

I did an experiment today because I wanted to see what 100g of protein (about 325g of cooked shredded chicken) looked like and if I could eat it in one sitting, to help me with my fitness goals. I cooked the chicken in my slow cooker the day before and then prepared it this morning with some home made bulgogi sauce, green onions from my garden, and sesame seeds. The results were very positive. I thought this would be far too much food for breakfast but it turned out to be perfect. It has kept me feeling full all day, my energy levels, focus, and mood have also all been great. I would like to repeat this experiment but try to do it much more economically. #cooking #recipes #fitness #food

Lately I have been spending some time each day perusing my copy of Samin Nosrat's Salt Fat Acid Heat. Today I followed her recipe for smoked honey sage chicken with fried sage salsa Verde. I have never been a potato person, always preferring rice dishes. Though after swelling up to around 270 lbs (122.47 kg) I refactored my knowledge on nutritional needs 😉. I eat a Keto/ Carnivore like diet eating only none starchy vegetables that are low in carbs. I have lost weight over the last 4 months and now weigh in at around 210 lbs (95.2544 kg). My new nutrition plan is a lifetime commitment so even though I will include more carbs once I have reached a more healthy weight, I will never consume carbs at the rate I used to prior to my new lifestyle. I just find it unhealthy. I use the way I feel as my greatest metric.


There are many factors to ones fitness plan. Each plan must be individualized as there is not a one size fits all solution. The solution you maintain in your life must be sustainable. So we have to choose something that we can live with 😀.

I cooked in kitchens while attending the Uni for my Masters in Computer Science. I eventually went to the Culinary Institute of America in Boston. I was a chef for a while but disdain professional cooking now. Though cooking at home will always be a passion of mine.

I agree, though I am pretty familiar with BBcode so that is what I use most of the time for the greatest compatibility I can count on propagating correctly.
